Underneath the thin skin, the flesh is bright yellow to gold, dense, and aqueous. Baby Gold beets are crunchy when raw and when cooked, they develop a tender, smooth consistency with a very mild, sweet, and earthy flavour. The beet greens are also edible and have a semi-bitter taste similar to swiss chard.
